生酮墨西哥捲餅 Keto Tortilla

材料Ingredients:
1 杯Cup 杏仁粉 almond flour
1 顆蛋 Egg
1 湯匙Tbsp (8g) 黃原膠 Xanthan Gum
½ 茶匙Tsp (2g) 泡打粉Baking Powder
1 湯匙Tbsp (15g) 水Water
一搓海鹽 A nice Pinch Of Sea Salt

作法:
- 把乾料在盆中均勻混合
- 加入蛋跟水,混合均勻成團,靜置15分鐘
- 準備兩片烘焙紙,把麵團放至烘焙紙中,桿平
- 用一個碗或是圓形模具切出適合的圓形
- 再不沾平底鍋,中火加熱2分鐘或是至正面變白,並立即翻面
- 翻面後再燒烤5-8秒即可出鍋。
*Tip: 翻面後一定要快速出鍋才可以保留一定的水分,不然會容易在彎折捲餅的時候破損喔!
Directions:
- Incorporate the dry ingredients in a bowl.
- Add the egg and water and form it into a dough, let set for 15mins.
- Prepare 2 parchment papers and place the dough in between, roll it into a nice thin sheet.
- Use a round bow or cookie cutter to make a nice round shape.
- Place the flat sheet into a medium heat pan, cook it for 2 mins or until the sheet turns pale.
- Flip over and count it from 1 to 5, leave the pan immediately.
*Tip: After the flip, you will not want to cook it for longer than 5 secs so the sheet still keeps its moisture. Overcooking could lead to a crack tortilla wrap.
這個食譜可以做三張中尺寸的捲餅,質地算鬆軟,可以包蠻豐盛的配料,這次安娜我做了酪梨醬,培根,德式香腸,起司等配料。
當然,如果想吃中式,也可以把它當作蛋餅皮喔~
