生酮低醣質金桔巧克力蛋糕 Keto Jaffa Orange cake (Keto Jaffa Kumquat cake)

脂肪Fat: 600g (60g/片slice) 淨碳水Net Carbs: 16.8 (1.68/片 slice)
材料Ingredients:
300 克 g 杏仁粉Almond flour
200 克 g 奶油 Butter
2 杯cups (300 grams) 羅漢果代糖monk fruit sweeter (偏甜)
4 顆蛋(室溫) large eggs room temperature
2 茶匙teaspoons 泡打粉baking powder
200 毫升ml 金桔醬Kumquat puree
1 茶匙teaspoon 香草精pure vanilla extract
柳橙/橘子皮Zest of an Orange
巧克力甘納許Chocolate ganache:
200毫升ml 鮮奶油Heavy cream
200g 100% 無糖巧克力豆chocolate bottoms
2 湯匙 tbsp. 羅漢果代糖monk fruit sweeter
1 搓海鹽pinch of sea salt
裝飾Topping:
糖果柳橙/橘子皮Candied Orange Peel

作法:
- 把乾料 (除了代糖) 在一個大盆子裡混合
- 在另一個盆子把四顆蛋和代糖打至兩倍大的體積
- 並加入室溫奶油和香草精和金桔醬,打勻 (有輕微奶油結塊無須理會)
- 把步驟1乾粉拌入,不要過度攪拌
- 準備一個10吋的圓形烤盤, 把麵糊倒入後, 在160℃烤55-60分鐘.
- 用一個筷子插入蛋糕體中心, 拔出後筷子上沒有麵糊表示已經烤熟!
- 放涼後淋上生酮巧克力甘納許和橘子皮裝飾
Directions:
- Pour all the dry ingredients (except sweetener) in a large bowl, mix well.
- Prepare another bowl, Beaten the eggs with the sweetener until double in volume.
- Add melted butter, vanilla extract and Kumquat puree, stir well.
- Mix the dry ingredients in step 1, do not over stir.
- Prepare a 10” round pan, pour the batter into the pan and bake under 160℃ for 55-60mins.
- Stick a chopstick and come out clean and it’s done!
- Let cool and pour the keto Chocolate ganache and Candied Orange Peel for deco.
冬天就是橘子, 香料等的季節! 這次剛好收到親戚送的金桔醬, 想說他拿來做Jaffa cake實在是再適合不過了!
