緊急上線的蛋糕分享~~ 為什麼呢? 因為聽說3-4月有超多人生日要慶祝~~
很早就想要來做但是一直沒有機會的安娜終於趁著安娜弟生日做了這次的食譜- 紅絲絨蛋糕+杯子蛋糕
作法相對簡單, 但是如果不會做這麼困難的裝飾, 可以發揮創意做出適合自己的方式~ 反正好吃最重要!
然後阿, 這次我不小心加太多可可粉, 所以蛋糕體偏深色>"< 我給的食譜已經調整過, 希望大家做出來會是超美的紅色!

生酮低醣紅絲絨杯子蛋糕 Keto Red Velvet Cupcake

準備時間Prep time: 15分鐘mins
烘培時間 Bake time: 25分鐘mins/ 50-60 分鐘mins (八吋蛋糕8” round cake)
烤箱溫度Temp: 180℃
份量Serving: 12 個 or 一個八吋蛋糕 1 8” round cake

材料Ingredients:
乾料DRY INGREDIENTS:
- 1 杯cups 杏仁粉Almond flour
- 1/4 杯cup 椰子粉Coconut flour
- 1 湯匙tbsp 可可粉cocoa powder , unsweetened
- 1 1/2 茶匙tsp baking powder
- 一小搓鹽Pinch of salt
- 2/3 杯cup 羅漢果代糖monk fruit sweetener/ 赤藻糖醇Erythritol
濕料WET INGREDIENTS:
- 60g / 4 湯匙tbsp 無鹽奶油unsalted butter , softened
- 4 顆蛋large eggs , 室溫at room temperature
- 1 杯cup 杏仁奶Almond milk
- 1 茶匙tsp 香草精vanilla extract
- 1/2 茶匙tsp 白醋white vinegar
- 1 湯匙tbsp 食用紅色染劑red food colouring or 紅麴粉Red Yeast Powder
奶油乳酪霜CREAM CHEESE FROSTING:
- 240g 無鹽奶油unsalted butter , 室溫軟化softened
- 500g 奶油乳酪cream cheese , 室溫軟化softened
- 1/2 tsp 香草精vanilla extract
- 1/8 tsp 鹽salt
- 2 1/2 杯cups 粉狀代糖icing sugar alcohol
作法:
蛋糕體
- 預熱烤箱至180℃,準備舖有烘培紙的8”圓形模具和杯子蛋糕模具
- 把乾料(除了代糖)在一個攪拌盆中混合均勻,可以把可可粉過篩來防止節塊。
- 在另一個盆中把雞蛋、奶油、杏仁奶等濕料與代糖均勻混合至溶化。
- 再把白醋加入混合後,拌入乾料混合均勻,使用適量染劑染成喜歡的程度。
- 倒入模具,杯子蛋糕與圓形蛋糕都只裝滿8分滿, 杯子蛋糕在180℃烤25分鐘,8” 蛋糕烤45-55分鐘。
奶油乳酪霜
- 把於室溫軟化的無鹽奶油用打蛋器打約3分鐘至半打發後,加入奶油乳酪繼續打3分鐘。
- 乳霜呈現一倍大小後,把糖粉分三次加入病均勻混合。
- 最後把香草精與鹽加入繼續打發至硬挺即可使用!
可以使用任意喜歡的裝飾方法, 發揮創意喔!
Directions:
Cake
- Preheat oven at 180℃, prepare a 8” inch round pan and cupcake mold.
- In a bowl, combine all the dry ingredients except the sweetener, strain the cocoa powder to prevent lumps.
- In another bowl, incorporate the eggs, butter, almond milk and sweetener, mix till the sweetener is well dissolved.
- Mix the vinegar and combine the dry and the wet, colour the mixture to your liking.
- Fill the batter at around 80% (do not overfill), and bake the cupcakes at 180℃ for 25mins, and 45-55mins for the round cake.
CREAM CHEESE FROSTING
- Beat the soften butter for 3 mins before adding the cream cheese.
- Add the cream cheese and beat for another 3 mins.
- Add the powder sweetener is 3 batches, incorporate well before adding more.
- Add the vanilla extract and salt and give it a final mix and it’s done!
Frost and decorate the cake to your preference, be creative!
