烤箱溫度Temp: 180℃

材料Ingredients:
2 杯cups杏仁粉Almond flour
½ 杯cups 小麥蛋白vital wheat gluten
2 茶匙teaspoons 泡打粉baking powder
1 茶匙teaspoon 小蘇打粉baking soda
1 and 1/2茶匙 teaspoons 肉桂粉ground cinnamon
½ 茶匙teaspoon 薑粉ground ginger
¼ 茶匙teaspoon 荳蔻粉ground nutmeg
½ 茶匙teaspoon 鹽salt
3/4杯cup (180ml) 椰子油coconut oil
1-2 湯匙tbsp 水 Water
4 顆蛋(室溫) large eggs room temperature
2 杯cups (300 grams) 羅漢果代糖monk fruit sweeter
1 茶匙teaspoon 香草精pure vanilla extract
2.5 杯cups (300 grams) 紅蘿蔔絲grated carrots, lightly packed
1 杯cup 碎核桃chopped walnuts
生酮糖霜Keto royal icing
1杯cup 粉末狀代糖Powder sweetener
1 湯匙tbsp. 水water

作法:
- 把乾料 (除了代糖) 在一個大盆子裡混合
- 在另一個盆子把四顆蛋打勻, 並加入椰子油和香草精
- 把代糖加入第二步驟的濕料中, 拌勻
- 把紅蘿蔔絲和碎核桃與乾料混合, 並倒入濕料混合均勻.
- 準備一個9吋的圓形烤盤, 把麵糊倒入後, 在180℃烤20-25分鐘.
- 用一個筷子插入蛋糕體中心, 拔出後筷子上沒有麵糊表示已經烤熟!
- 放涼後淋上生酮糖霜和核桃裝飾.
Directions:
- Pour all the dry ingredients (except sweetener) into a large bowl, mix well.
- Prepare another bowl, Beat the eggs and add coconut oil, vanilla extract.
- Mix the sweeter and wet ingredients in step 2.
- Mix the grated carrot and chopped walnuts into the dry, and pour in the wet ingredients, mix well.
- Prepare a 9” round pan, pour the batter into the pan and bake under 180℃ for 40-45mins.
- Stick a chopstick and come out clean and it’s done!
- Let cool and pour the keto icing and extra walnut for decoration.
